PANETTONE WITH PEARS AND MODICA IGP CHOCOLATE
Modica chocolate, known in the local dialect as “ciucculatti muricanu,” is produced using a special “cold” processing method. This method was introduced to the County of Modica during the Spanish rule of Sicily in the 16th century. The Spanish learned the technique for processing cocoa beans from the Aztecs, and it was the Spanish who were the first to add sugar to cocoa, create the earliest form of chocolate, and spread it throughout their territories, including the County of Modica.
In 2018, Modica chocolate was granted Protected Geographical Indication (PGI) status by the European Union.

Ingredients: Type 00 SOFT WHEAT FLOUR, butter (contains milk), EGG yolk, sugar, candied pear 10.3% (pear, sugar, acidifier: E330 citric acid, preservative: E202 potassium sorbate, flavoring), sourdough starter, Modica IGP chocolate 8.8% [cocoa mass (55% min), sugar], dark chocolate coating 4.2% (cocoa mass; sugar; cocoa butter; emulsifier: SOY lecithin), honey, invert sugar, salt, emulsifier: (mono- and diglycerides of fatty acids) – Acidifier: acetic acid, vanilla flavoring, flavorings.
It does not contain raisins or candied citrus peel.
