MODICA IGP CHOCOLATE CREAM
Our Modica IGP chocolate cream was created out of a strong desire to use not only pistachios but also the finest artisanal products from our island of Sicily. Among these is, without a doubt, Modica chocolate, a high-quality artisanal product made using a special “cold” processing method.
During Spanish rule in Sicily in the 16th century, this process was introduced in the County of Modica after the Spanish learned the technique for processing cocoa beans from the Aztecs. They were the first to add sugar to cocoa, create the earliest form of chocolate, and spread it throughout their territories, including the County of Modica.
Leonardo Sciascia recalls how, in his day, chocolate production in the city of Modica was still limited, noting also that there were originally only two versions: a classic one and one with the addition of vanilla and cinnamon. Historically, it has been passed down as a traditional dessert of noble families, who prepared it at home during holidays and important occasions. In this way, it has been passed down to the present day, and only later did it become an internationally renowned confectionery product.
Modica chocolate comes in a solid form shaped like a bar and contains sugar as well as cocoa. In 2018, Modica chocolate was granted Protected Geographical Indication (PGI) status by the European Union.
At Brontedolci, we decided to pack Modica chocolate into a 190-gram jar of spread to open and enjoy with cookies, slices of bread, and various desserts.
SUGGESTIONS
Bronte Dolci doesn’t just make cream; it also produces two types of panettone with Modica chocolate. Check it out at /product/panettone-pistachio-and-modica-chocolate/
